Ingredients
  

  • 3 medium size zucchini
  • 1 pound Italian sausage browned and grease drained
  • 1 cup low carb marinara such as Rao's
  • 1/2 cup shredded parmesan
  • 1 cup shredded mozzarella

Instructions
 

  • Preheat the oven to 350 degrees.
  • Slice the zucchini lengthwise and use a small spoon to hollow out the inside of the zucchini. Place the zucchini in a baking dish.
  • Combine the cooked Italian sausage, low carb marinara and Parmesan cheese in a medium size mixing bowl.
  • Spoon the sausage mixture into the zucchini and top with shredded mozzarella. 
  • Bake for 25-30 minutes until the cheese is melted and the zucchini is tender.
