  • Add ice, lime juice, and rum, then shake.
  • Strain over a highball glass full of ice, then top with lime sparkling water.
  • Garnish with a slice of lime and additional mint leaves.

Notes

Keto simple syrup: 1 cup of water, 1 tablespoon of Now monk fruit liquid sweetener. If using a different brand, start with 1/2 tablespoon and add as needed since different brands may have different levels of sweetness.
