Ingredients
  

  • 2 cucumbers chopped
  • 1 cup tomatoes chopped
  • 1/2 cup red onion chopped
  • 1/4 cup jarred pepperoncini peppers
  • 1/4 cup olives green, black or kalamata
  • 1/4 cup olive oil
  • 1 tablespoon lemon juice
  • 1/2 cup crumbled feta cheese
  • salt and pepper to taste

Instructions
 

  • Combine all chopped vegetables, peppers and olives.
  • Drizzle with olive oil, lemon juice and salt and pepper to taste. Stir well
  • Fold in crumbled feta cheese when ready to serve.
