- 2 cucumbers chopped
- 1 cup tomatoes chopped
- 1/2 cup red onion chopped
- 1/4 cup jarred pepperoncini peppers
- 1/4 cup olives green, black or kalamata
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1/2 cup crumbled feta cheese
- salt and pepper to taste
Combine all chopped vegetables, peppers and olives.
Drizzle with olive oil, lemon juice and salt and pepper to taste. Stir well
Fold in crumbled feta cheese when ready to serve.
This is best eaten within 24 hours of preparation.
