Today’s recipe is full of fresh summer flavor! This Greek Cucumber Salad is loaded with cucumber, tomatoes, red onion, peppers, olives and a simple lemon and olive oil dressing. I have always loved a good cold pasta salad packed with vegetables and this has become my low carb substitute. You’ll love this salad on it’s own, but it is equally delicious paired with chopped leafy greens and grilled chicken to make a Greek Chicken Salad that is hardy enough for dinner.
What should I serve with Greek Cucumber Salad?
While this Greek Cucumber Salad is great on it’s own it pairs well with lots of great entrees. These Blackened Salmon and Zucchini Skewers work well because the lemon and tangy feta work beautifully with grilled salmon. If you’d rather not break out the grill these Salmon Patties or Pesto Chicken Peppers are a great match too. And don’t forget about lunch! This salad is an excellent quick and easy low carb lunch!
Greek Cucumber Salad (keto + low carb)
This Greek Cucumber Salad is packed with fresh vegetables and topped with tangy feta cheese! This is a great low carb lunch!
Ingredients
- 2 cucumbers, chopped
- 1 cup tomatoes, chopped
- 1/2 cup red onion, chopped
- 1/4 cup jarred pepperoncini peppers
- 1/4 cup olives (green, black or kalamata)
- 1/4 cup olive oil
- 1 tablespoon lemon juice
- 1/2 cup crumbled feta cheese
- salt and pepper to taste
Instructions
- Combine all chopped vegetables, peppers and olives.
- Drizzle with olive oil, lemon juice and salt and pepper to taste. Stir well
- Fold in crumbled feta cheese when ready to serve.
Notes
This is best eaten within 24 hours of preperation.
