Vanilla Chia Seed Pudding Layer:

Strawberry Cheesecake Layer:

  • 3 oz cream cheese
  • ½ cup sliced strawberries
  • ¼ cup confectioners Swerve sweetener
  • 2 tbsp heavy cream sub 1 tablespoon unsweetened almondmilk if you don't have or need to cut the fat content
  • ½ tsp vanilla extract

Instructions
 

For the Chia Pudding Layer:

  • Combine all the Vanilla Chia Seed Pudding ingredients and stir vigerously for 1 minute.
  • Chill in the fridge overnight or for at least 30 minutes until liquid as been absorbed and the chia seeds are inflated.
    TIP: Stirring vigerously occasionally speeds up this process significantly.

For the Strawberry Cheesecake Layer:

  • Combine the ingredients in a small blender or food processor, pulse until smooth and creamy.

To assemble:

  • In three small 7 ounce jars, spoon equal amounts of cheesecake layer into each jar. Top with chia seed pudding.
