Ingredients
  

  • 8 ounces cream cheese
  • 1 cup creamy almond butter sugar free
  • ½ cup confectioners monkfruit sweetener
  • 2 teaspoons vanilla extract
  • ¾ cup Lily's white sugar-free chocolate chips
  • 2 tablespoons coconut oil
  • 3 tablespoons finely chopped salted almonds

Instructions
 

  • Combine the cream cheese, almond butter, sweetener, and vanilla extract in a mixing bowl and beat with an electric mixer until smooth and creamy.
  • Roll the cheesecake mixture into tablespoon-sized balls (this is easier if you chill it for a few minutes first). Freeze the cheesecake balls at least 20 minutes so it is easier to dip them into the warm chocolate.
  • Melt the chocolate and coconut oil to make the chocolate coating. You can use a double broiler or melt in a microwave-safe bowl, heating in 30 second increments at 50% power.
  • Dip the cheesecake balls into the chocolate, and place on a silicone or wax paper lined baking sheet.
  • Sprinkle the top of the truffles with the chopped salted almonds before the chocolate dries.
