Combine the cream cheese, almond butter, sweetener, and vanilla extract in a mixing bowl and beat with an electric mixer until smooth and creamy.
Roll the cheesecake mixture into tablespoon-sized balls (this is easier if you chill it for a few minutes first). Freeze the cheesecake balls at least 20 minutes so it is easier to dip them into the warm chocolate.
Melt the chocolate and coconut oil to make the chocolate coating. You can use a double broiler or melt in a microwave-safe bowl, heating in 30 second increments at 50% power.
Dip the cheesecake balls into the chocolate, and place on a silicone or wax paper lined baking sheet.
Sprinkle the top of the truffles with the chopped salted almonds before the chocolate dries.
