Asian Cucumber Carrot Salad

Ingredients
  

  • 3 cups baby or Persian cucumbers , sliced
  • 1 cup sliced carrots , thinly sliced
  • ½ cup shelled edamame
  • ¼ cup red bell pepper , chopped
  • ¼ cup green onions , chopped

Sesame Dressing

  • 1 tablespoon sesame oil
  • 1 tablespoon sugar free sweet chili garlic sauce
  • 2 teaspoons soy sauce
  • 2 teaspoons sugar free sweetener*
  • 2 teaspoons minced garlic
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon rice vinegar

Garnish

  • ¼ cup salted peanuts , chopped
  • 2 tablespoons chopped cilantro (optional)

Instructions
 

  • Whisk together the sesame dressing ingredients; set aside.
  • Combine the cucumbers, carrots, edamame, red pepper, and green onions. Pour the dressing over the salad and toss to coat.
  • Top with salted peanuts and cilantro if using.

Notes

* I use Lakanto sugar free maple syrup, but you can use your sweetener of choice. 
I use G. Hughes Sugar Free Sweet Chili Sauce
