Ingredients
  

  • 2 eggs
  • 1/4 cup almond flour*
  • 3/4 cup shredded cheddar cheese
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/2 cup chopped broccoli

Instructions
 

  • While the mini waffle maker is preheating, whisk eggs in a small mixing bowl.
  • Add in flour, baking powder, and seasonings, mixing until smooth.
  • Stir in shredded cheese and chopped broccoli until well combined.
  • When the waffle maker is ready, scoop 2 full tablespoons of the mixture and spread it onto the hot waffle iron. Close the machine and cook until all steam has stopped coming out from the sides (4-5 minutes usually).
  • For the crispiest chaffles, allow the hot chaffle to cool on a wire rack for several minutes to firm up.

Notes

*If you'd like a low-carb, grain-free, nut-free flour substitute, you could use a scant 2 tablespoons of coconut flour. Once you mix it in, make sure to give it at least 5 minutes to absorb the liquid for the right texture.
