Ingredients
  

  • 1 lb cauliflower florets
  • 1 tbsp avocado oil or other cooking oil
  • 1 tbsp coconut flour
  • 1 ½ tsp garlic powder
  • 1 tsp onion powder
  • ½ tsp smoked paprika
  • ½ tsp salt
  • 2 tbsp Buffalo sauce
  • ½ tbsp butter melted
  • Buffalo sauce, bleu cheese dressing, or ranch for dipping

Instructions
 

  • Preheat the oven to 400 degrees and line a baking sheet with parchment paper.
  • Place the cauliflower florets in a large bowl and toss in the oil. Set aside.
  • In a small bowl, stir together the coconut flour, garlic powder, onion powder, smoked paprika, and salt.
  • Sprinkle the mixture onto the cauliflower and toss to combine.
  • Lay the cauliflower out on the prepared sheet pan in a single layer.
  • Bake the cauliflower in the preheated oven for 25-30 minutes, until tender. Meanwhile, whisk together the buffalo sauce and melted butter in a small bowl.
  • Remove the cauliflower from oven and allow to cool about 5 minutes. Carefully toss the cooked cauliflower in the buffalo sauce butter mixture until well-coated.
  • Place the cauliflower back onto the sheet pan in a single layer, and bake for another 10 minutes in the preheated oven. Serve!

Notes

  • These are great dipped in ranch or bleu cheese dressing. For the buffalo fanatics, serve with more buffalo sauce!
  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • Buffalo cauliflower is a deliciously low-carb snack on game day!
