1 tablespoon olive oil 2 chicken breast chopped into bite sized pieces (about 2 cups) 2 teaspoons cajun seasoning or your favorite all purpose seasoning 12 ounces smoked sausage sliced (about 2 cups) 1 tablespoon butter 2 cloves minced garlic 4 cups chopped cabbage salt and pepper to taste
Start by tossing the chopped chicken with the Cajun seasoning and browning over medium heat. Next, add the smoked sausage.
When your sausage is browned and slightly crisp, remove from the skillet and set aside.
Without rinsing or washing your pan add one tablespoon of butter, two cloves of garlic and 4 cups of chopped cabbage.
Fry the cabbage, stirring occasionally over medium heat until it reaches your desired tenderness.
Add the cooked Cajun chicken and smoked sausage back into the skillet and stir. Add salt and pepper to taste.
If you'd like to add onions, add those when you add the garlic in Step 3. This will increase the carb count, though.
