Equipment

  • 1 cutting board

Ingredients
  

  • 2 cups cooked chicken chopped or shredded
  • 1 cup mozzarella pearls
  • 8 strips bacon cooked and crumbled
  • ¼ cup basil leaves chopped
  • 6 cups mixed greens
  • 8 oz cherry tomatoes
  • ½ cup low carb balsamic vinaigrette
  • ½ cup basil vinaigrette

Instructions
 

  • Add bowls of chicken, mozzarella pearls, crumbled bacon, and basil leaves to a large serving board, leaving room between each bowl.
  • Sprinkle the mixed greens all around the board evenly.
  • Place the cherry tomatoes on top of the lettuce.
  • Place little jars of the dressings on the board.
  • Add spoons and serving utensils, then serve!

Notes

  1. You’ll need a serving board with edges to keep the lettuce contained. I used this one from World Market. 
  2. This recipe will serve 4 larger salads or 6 smaller side salads. Keep that in mind when thinking about hosting and the other food you’ll be serving.
  3. You can put this together up to about a day ahead of time!
