Ingredients
  

  • 3 medium zucchinis sliced into strips
  • 24 baby bocconcini
  • 12 cherry tomatoes halved
  • 24 basil leaves
  • olive oil
  • salt and pepper to taste

Instructions
 

  • Preheat grill to medium-high or about 400°F.
  • Place one basil leaf, cherry tomato half and bocconcini on a zucchini strip.
  • Roll as tightly as you can, and secure with a toothpick. Then repeat with remaining ingredients.
  • Brush roll-ups with olive oil and sprinkle with salt and pepper. Grill until the zucchini is lightly charred, 1-2 minutes per side. Serve immediately.
