Instructions
Place the chicken on a cutting board and slice lengthwise as if you are butterflying the chicken, but cut it all the way through. Sprinkle the seasonings on each side of the chicken.
Heat a large skillet over medium heat, add 1 tablespoon olive oil and 1 tablespoon of butter. Brown the chicken on each side for 2-3 minutes until golden brown. Remove from the pan and set aside.
Add the second tablespoon of butter to the skillet. Add the garlic and shallot, saute until fragrant. Add the white wine (or chicken broth), scrape the pan well to deglaze and bring the wine to a simmer. Add the mustards and stir well. Allow it to reduce by half.
Stir in the heavy cream and Place the chicken in the cream sauce. Cover and simmer over low 10-15 minutes until the chicken has reached an internal temperature of 165 degrees.
