Ingredients
  

Filling:

  • 4 cups cooked chicken shredded or chopped
  • ½ cup sour cream
  • ¼ cup plain Greek yogurt
  • 2 tbsp chopped chipotle peppers in adobo sauce
  • 2 tbsp cilantro
  • ½ tsp garlic powder
  • ½ tsp cumin
  • ½ tsp salt
  • 1 lime juiced and zested

For serving:

  • 1 head romaine lettuce
  • 2 avocados diced or sliced
  • Lime wedges
  • Cilantro leaves

Instructions
 

  • In a food processor, blend together the sour cream, Greek yogurt, chipotle peppers, cilantro, garlic powder, cumin, and lime juice and zest. Set aside.
  • Spoon the cooked chicken into the lettuce leaves, then top with avocado and chipotle sauce, and garnish with lime wedges and cilantro. Serve!

Notes

  • The sauce keeps in the fridge for up to 3 days. It’s best to assemble with the lettuce only when you’re ready to serve so the lettuce doesn’t wilt.
  • Use whatever lettuce you want to as long as it has nice broad, strong leaves. Butter lettuce, green leaf, and romaine work the best.
This recipe makes 4 servings, 4 lettuce wraps per serving, and has 5.1 net carbs.
