This quick cottage cheese ice cream takes only 3 minutes to blend before freezing. It's creamy, high protein, low carb, and great for a fast dessert or meal prep sweet treat.
1/4cupliquid sweetener*monk fruit maple syrup if keto, honey or maple syrup if not
pinchof sea salt
2cookiesmint sandwich cookies **optional**we used low carb Dunkies Mint Sandwich Cookies
Instructions
Add the cottage cheese to a food processor. Blend on high for 1 minute. The cottage cheese should be light and fluffy.
Add the remaining ingredients and blend 30 seconds.
Then place in an airtight container and freeze for at least 1 hour.
Notes
*Adjust the sweetener as needed based on your personal preference. If you prefer things very sweet you may want to do 1/3 cup of sweetener.**I added a couple mint low carb sandwich cookies for flavor. This is an optional ingredient.
