This quick cottage cheese ice cream takes only 3 minutes to blend before freezing. It's creamy, high protein, low carb, and great for a fast dessert or meal prep sweet treat.

Ingredients
  

  • 2 cups full fat cottage cheese
  • 1/3 cup cocoa powder
  • 1 teaspoon vanilla powder
  • 1/4 cup liquid sweetener* monk fruit maple syrup if keto, honey or maple syrup if not
  • pinch of sea salt
  • 2 cookies mint sandwich cookies **optional** we used low carb Dunkies Mint Sandwich Cookies

Instructions
 

  • Add the cottage cheese to a food processor. Blend on high for 1 minute. The cottage cheese should be light and fluffy.
  • Add the remaining ingredients and blend 30 seconds.
  • Then place in an airtight container and freeze for at least 1 hour.

Notes

*Adjust the sweetener as needed based on your personal preference. If you prefer things very sweet you may want to do 1/3 cup of sweetener.
**I added a couple mint low carb sandwich cookies for flavor. This is an optional ingredient. This is a great recipe to customize based on your flavor preferences.
