Ingredients
  

For the Chicken

  • 2 large chicken breasts
  • 1 teaspoon Italian seasoning
  • salt and pepper to taste
  • 1 tablespoon butter

For the Mushroom Sauce:

  • 2 tablespoons butter divided
  • 1 teaspoon minced garlic
  • 1 8 ounce package mushrooms, thinly sliced
  • 1/2 cup white cooking wine
  • 1/4 cup heavy cream
  • ½ cup shredded Swiss cheese

Instructions
 

  • Place the chicken on a cutting board and slice as if you are butterflying, but slice all the way through. This will leave you with 4 thinner chicken breasts.
  • Sprinkle each side of the chicken breast with the Italian seasoning, salt and pepper.
  • In a skillet over medium heat, melt 1 tablespoon of butter.
  • Brown the chicken breasts for 3-4 minutes on each side, remove from skillet, and set aside. (Note that the chicken won't be fully cooked at this stage.)
  • Add 1 tablespoon butter, garlic, mushrooms, 1/2 cup wine, and simmer until liquid is almost gone. This can take up to 10 minutes.
  • Add 1 tablespoon butter, 1/4 cup cream, stir well. This will create a creamy mushroom sauce.
  • Nestle chicken in the mushroom sauce and top with the shredded Swiss cheese.
  • Cover and simmer for 6-8 minutes, or until the chicken has reached an internal temp of 165 degrees F.
