This one-skillet 30-minute Creamy Mushroom Chicken recipe is a delicious quick-fix dinner made with tender chicken smothered in a rich, luxurious cream sauce. Great for a weeknight meal or to serve at a dinner party!
Place the chicken on a cutting board and slice as if you are butterflying, but slice all the way through. This will leave you with 4 thinner chicken breasts.
Sprinkle each side of the chicken breast with the Italian seasoning, salt and pepper.
In a skillet over medium heat, melt 1 tablespoon of butter.
Brown the chicken breasts for 3-4 minutes on each side, remove from skillet, and set aside. (Note that the chicken won't be fully cooked at this stage.)
Add 1 tablespoon butter, garlic, mushrooms, 1/2 cup wine, and simmer until liquid is almost gone. This can take up to 10 minutes.
Add 1 tablespoon butter, 1/4 cup cream, stir well. This will create a creamy mushroom sauce.
Nestle chicken in the mushroom sauce and top with the shredded Swiss cheese.
Cover and simmer for 6-8 minutes, or until the chicken has reached an internal temp of 165 degrees F.
