Ingredients
  

  • 1 pound baby cucumbers
  • 1/4 cup thinly sliced red onions
  • 2 tablespoons champagne vinegar
  • 1 tablespoon sweetener of choice monk fruit if low carb
  • 1 teaspoon minced dill
  • salt and pepper to taste

Instructions
 

  • Slice the cucumbers and place in a large bowl. Add the red onions.
  • In a smaller bowl combine the vinegar, sweetener, and dill. Stir to combine.
  • When the sweetener has dissolved pour over the cucumbers and gently coat.
  • Add salt and pepper to taste.

Notes

  1. You can use apple cider vinegar, or white rice vinegar if you prefer.
  2. Any variety of cucumbers will work but baby or English cucumbers generally hold their crunch the longest.
  3. If you want to remove as much moisture as possible from the cucumbers you can slice and place them in a mesh strainer. Sprinkle with salt and allow it to sit 15 minutes. Quite a bit of water will come off the cucumbers. Rinse the cucumbers well before adding to the salad.
  4. Add the dill and red onion to taste, as written they are on the modest side.
