Ingredients
  

  • 1 ½ lbs chicken thighs boneless/skinless
  • ¼ cup avocado oil
  • 2 canned chipotle chilies chopped
  • 2 tbsp adobo sauce from the can of chipotles
  • 1 tbsp sugar free maple syrup
  • 2 tsp garlic powder
  • 1 ½ tsp chili powder
  • 1 tsp onion powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • Zest and juice from 1 lime

Instructions
 

  • Add all the marinade ingredients to a shallow bowl or ziplock bag and stir to combine.
  • Add the chicken and marinate for 4-8 hours in the fridge.
  • Preheat your grill to medium-high heat. Remove the chicken from the marinade and place it on the grill. Cook chicken for 10 minutes, then flip and grill another 5 minutes or until the chicken is cooked through to 165 degrees. Remove the chicken from the grill and allow to rest for about 5 minutes.
  • Slice and serve!

Notes

  • Marinating is not totally required but it yields much more flavorful chicken!
  • Store the leftover chicken in an airtight container for up to 3 days in the refrigerator. Use on the burrito bowls, tacos, taco salad, in wraps, or just eat it with a side of cauliflower rice.
  • Each servings has 2.4 net carbs.
