Add the strawberries to a high-speed blender or food processor and blend until smooth. Set aside.
In a mixing bowl, whip the heavy cream until soft peaks form (about 2-3 minutes). Set aside.
In a separate mixing bowl, whip the cream cheese until light and fluffy. Add the powdered monk fruit sweetener, pureed strawberries, and vanilla extract and whip until combined. This will take 2-3 minutes.
Fold in the whipped heavy cream.
Transfer the strawberry mousse to individual containers, cover, and refrigerate for at least 2 hours. Serve!
