Strawberry Mousse

Ingredients
  

  • ¾ cup pureed fresh strawberries about 8-12 strawberries
  • 1 cup heavy cream
  • 8 oz cream cheese softened to room temperature
  • 1 cup powdered monk fruit sweetener
  • 2 tsp vanilla extract

Instructions
 

  • Add the strawberries to a high-speed blender or food processor and blend until smooth. Set aside.
  • In a mixing bowl, whip the heavy cream until soft peaks form (about 2-3 minutes). Set aside.
  • In a separate mixing bowl, whip the cream cheese until light and fluffy. Add the powdered monk fruit sweetener, pureed strawberries, and vanilla extract and whip until combined. This will take 2-3 minutes.
  • Fold in the whipped heavy cream.
  • Transfer the strawberry mousse to individual containers, cover, and refrigerate for at least 2 hours. Serve!
