- Ground Chicken: the base ingredient for the fritters. You could also use ground turkey.
- Produce: broccoli, carrot, and green onions
- Cheese: sharp cheddar cheese helps create a sharp, delicious flavor.
- Egg: use a large egg which will bind the fritters together and add moisture to the texture.
- Ranch Seasoning: gives the fritters a savory, zesty flavor.
- Coconut Flour: a gluten free flour that also helps bind the fritters together while adding a very subtle, sweet and nutty flavor.
How to Make Broccoli Cheddar Chicken Patties
Below are step-by-step instructions so you can easily make these chicken fritters. You will need a stovetop burner, large skillet, mixing bowl, and a small ice cream scoop or ¼ cup measuring cup.
Combine ingredients
First, combine the ground chicken, broccoli, Ranch seasoning, shredded carrot, and green onions. After combining these ingredients, add the egg, shredded cheddar cheese, and coconut flour.
Pat out the fritters

Now, use a small ice cream scoop or 1/4 cup measuring cup to pat out the fritters. Make them a little thinner than you think because they will puff up a bit.
Cook the fritters

Heat oil in the skillet over medium heat. Once oil begins to shimmer, carefully add the fritters to the skillet. Don’t overcrowd skillet. The fritters shouldn’t be touching. Cook 3-4 minutes on each side until they’re golden brown and internal temperature is 165 degrees with an instant-read thermometer. Once cooked through, remove them from the skillet and place on paper towel-lined plate to absorb any extra oil. Now they’re ready to serve!
Storage and Reheating Instructions
These chicken patties are at their best hot from the skillet. That said, they’re still very tasty as leftovers too. Once they’ve cooled to room temperature, store leftovers in an airtight container in the refrigerator for 3-4 days. For the best texture, reheat them in the air fryer at 350ºF for a few minutes until warmed or in the oven at 350ºF for 10-15 minutes or until heated through. They really crisp up again in the air fryer!

Tips and Tricks
- Refrigerating the mixed patties overnight before you cook the fritters will enhance the flavors and also firm up the mixture so they hold their shape better. If you’re short on time this certainly isn’t a necessity but there is a noticeable difference.
- Using a small ice cream scoop for scooping the batter helps with uniformity.
- Using a meat thermometer to test the fritters for doneness not only ensures they’re cooked to a safe temperature. It also helps you gauge if they’re browning too quickly so you can adjust the temperature of the skillet if needed.
