How to Make Bruschetta Chicken
Below are photos and recipe steps so you can easily make this low carb chicken dinner at home. You will need a grill or grill pan, knife, and a cutting board for this recipe.
Butterfly the chicken

Place the chicken on the cutting board and carefully cut through it as if you are butterflying the chicken but slice it all the way through so you have two thinner, more uniform chicken breasts. This will give you four thin chicken breasts.
Marinate the chicken


Combine the olive oil, balsamic vinegar, minced garlic, salt, and pepper. Pour the marinade over the chicken and chill for at least 1 hour, but up to 24 hours.
Cook the chicken


Heat a grill or grill pan to medium heat, approximately 375 degrees. Add the chicken and grill for 3-4 minutes on each side. Check the meat using a meat thermometer, and when the chicken registers 165 degrees F add one slice of fresh mozzarella cheese to each piece of chicken. Close the lid to the grill or cover for one minute and allow the cheese to melt.
Add the bruschetta


Remove the chicken from heat and allow it to rest for a few minutes. Then combine the chopped tomatoes, garlic, red onion, and basil with a drizzle of good olive oil, balsamic vinegar, salt, and pepper! Add the bruschetta on top of the chicken and enjoy!

Storage and Reheating Instructions
It is best to store the bruschetta and the chicken separately. You can store each in airtight containers in the refrigerator for up to 3-4 days. If you would like to freeze the recipe, you can freeze the chicken for up to 3 months in a freezer safe container. The bruschetta is best when fresh. We do not recommend freezing the bruschetta.
To reheat the chicken, you can either warm in the oven covered at 350 degrees F for 8-10 minutes or in the microwave in 30-second increments until heated to your desired level. If frozen, allow to thaw in the fridge overnight before reheating.
