When I began a low carb, keto lifestyle I was completely dismissive of lettuce wraps. I was so wrong! There is something so completely refreshing about cool, crispy, crunchy lettuce packed with delicious ingredients like grilled chicken, cheese and other veggies! Lettuce wraps have become one of my go to lunch or quick dinners.
I especially love meals like this in the summer. I am able to keep my cooking time to a minimum by meal prepping chicken and bacon earlier in the week. This makes throwing a satisfying wrap together take about 5 minutes on a busy night!
Ingredients Needed for a Chicken Lettuce Wrap
This is just a quick overview of the ingredients, you will find the complete recipe below:
- Lettuce: Fresh, cold iceberg lettuce is my favorite, but romaine works well too.
- Chicken: grilled, rotisserie, or your favorite left over chicken.
- Bacon: cooked, crispy bacon.
- Cheese: cheddar, Swiss, gouda, Pepper-Jack or Colby-Jack all work well for this recipe.
- Ranch dressing: your favorite brand of Ranch, or Jalapeno Ranch for some added spice.
How do you make a low carb lettuce wrap?
- Tear a 12 inch square of wax paper to use as your base.
- Place 2-3 lettuce leaves in the center of the paper so they slightly overlap creating a solid barrier.
- Add sliced cheese in the center. Top with chicken, bacon and ranch dressing.
- Use the wax paper to help you wrap it tightly like a burrito.
- Slice down the center when ready to eat.
What kind of lettuce should I use for a lettuce wrap?
Different varieties of lettuce have different qualities. If you want a good crunchy wrap be sure to use fresh iceberg lettuce. Romaine is a close second for crunch as well. Alternatively, if you prefer a softer lettuce that you can really stuff without tearing too easily, use Bibb lettuce.
Is a lettuce wrap good for meal prep?
Certainly! While I do not suggest completely preparing this lettuce wrap more than just a few hours ahead of time, there are elements of this wrap that can be made ahead of time.
- Prepare the chicken ahead of time: I like to grill thinly sliced chicken breast and store them in the fridge for wraps and salads. This is one of the easiest meal prep short cuts. For this recipe I use this delicious Chipotle Ranch Grilled Chicken. I combine the marinade and pour in a ziplock bag over the thinly sliced chicken breast and marinate at least an hour up to overnight.
- Grill for 4-5 minutes on each side over medium heat or until a meat thermometer reaches 165 degrees. Allow the meat to rest 5 minutes before slicing. This cooked grilled chicken will last up to 5 days in an airtight container in the fridge.
- Cook the bacon ahead of time: You can fry the bacon in a skillet over medium heat until crisp. Or you can bake the bacon on a foil lined pan at 400 degrees F for 10 minutes, flip and bake an additional 8-10 minutes until crisp.
