How to Make Cottage Cheese Chaffles
This recipe is really simple. Just follow my step-by-step guide below to make these low carb waffles!


- In a mixing bowl, beat the eggs well. Then fold in the remaining ingredients until completely incorporated.
- Meanwhile, heat a waffle maker according to the manufactures directions. Then add the batter to the waffle maker (about 2 scoops for the Dash waffle maker) be careful not to overfill.
- You will remove the waffles when you can no longer see any steam coming from the machine and the waffles are golden brown.

Storage and Reheating Instructions
These almond flour waffles hold up really well for meal prep and are easy to stash in the freezer for later. Just make sure they’re completely cooled, then stack them with parchment paper in between to prevent sticking. Transfer the stack to a freezer-safe bag or container and seal tightly.
When you’re ready to enjoy them again, pull out however many you want and either let them sit on the counter for about 30 minutes or thaw them slowly in the fridge overnight.
You can warm them back up in a number of ways: air fryer, toaster, waffle iron, stovetop, or microwave. The microwave is definitely the quickest but it tends to make them soft and a bit soggy. If you want that crisp/just-cooked texture, a few other methods work much better and are almost as easy. I’ve laid out my favorite options below:
- Air Fryer– the crispiest option. Set to 300°F and heat 3-4 minutes.
- Waffle Maker– reheat in a preheated iron for about 1 minute.
- Toaster– pop in the toaster and heat for roughly 30-45 seconds.
