Recipe Ingredients
Below are the simple ingredients you will need to make this creamy chicken mushroom recipe. Scroll to the recipe card at the bottom of the page to see the exact amounts for each ingredient.
- Chicken Breasts: I recommend using boneless skinless chicken breasts. Alternatively, you can use boneless skinless chicken thighs.
- Italian Seasoning: Use your favorite store-bought brand or make your own Italian seasoning blend.
- Butter: Use unsalted butter to best control the seasoning in the recipe. Alternatively, you can swap the butter with olive oil.
- Garlic: Fresh garlic cloves add the most robust flavor, or use pre-minced store-bought garlic for easier prep.
- Mushrooms: Any small-sized mushroom that’s easy to slice will work, like white, cremini, baby portabella, or shiitake mushrooms.
- White Wine: Choose a dry white wine like sauvignon blanc or pinot grigio to deglaze the pan and add a delicious acidity.
- Heavy Cream: I recommend using a full-fat heavy cream the richest, creamy sauce. Or you can substitute it for half-and-half or a lighter milk option.
- Swiss Cheese: Use freshly shredded Swiss cheese for the most robust flavor and melty texture. Alternatively, you can use freshly grated parmesan cheese, gruyére, or mozzarella.
How to Make Creamy Mushroom Chicken
Below are photos and recipe steps to easily make creamy chicken and mushroom recipes at home. You will also need a cutting board, a knife, a large skillet with a lid, and a stovetop burner.
Prepare the Chicken
Place the chicken on a cutting board and slice each breast as if you are butterflying it, but cut completely through the flesh. This will leave you with 4 thinner chicken breasts. Sprinkle each side of the chicken breasts with Italian seasoning, salt and pepper. In a skillet over medium heat, melt one tablespoon of butter.
Sear the Chicken
Brown the chicken breasts for 3-4 minutes on each side. Remove them from the skillet and set aside. Note: the chicken won’t be fully cooked yet, and will continue cooking at a later stage.
Prepare and Thicken the Sauce
Add 1 tablespoon of butter, the garlic, mushrooms, and wine, and simmer until the liquid is almost gone. This can take up to 10 minutes. Then add 1 tablespoon of butter and the heavy cream, and stir until well combined. This will create a creamy mushroom sauce.
Add the Chicken and Cover
Add the chicken back to the pan, nestling it in the mushroom sauce, then top with the shredded Swiss cheese. Next, cover the pan with a lid and simmer for 6-8 minutes, or until the chicken has reached an internal temp of 165ºF with a meat thermometer. Serve hot!

Tips and Tricks
- Flatten the chicken breasts with a meat mallet so they are all the same thickness for the most tender texture. This helps the chicken cook evenly and makes them extra juicy.
- Sneak in extra veggies like fresh chopped spinach, tomatoes, diced bell peppers, asparagus, broccoli, or zucchini for added flavor, texture, and a pop of color.
- Get the skillet hot before adding the chicken. This will ensure it sears properly and locks the juices and flavors in.
Creamy Mushroom Chicken FAQ
Allow the cheesy mushroom chicken to cool completely to room temperature before transferring to an airtight container and storing it in the refrigerator for up to 4-5 days. Reheat on the stovetop or in the microwave until heated through.
No, you can swap the white wine with chicken broth or vegetable broth if you prefer not to use it in this recipe. Just keep in mind that it will slightly change the flavor of the dish.
The best way to ensure this creamy mushroom chicken recipe is cooked through is by using a meat thermometer. Insert the thermometer into the center of one of the chicken breasts, and when it reads 165ºF, it’s done!
