I have always loved the simplicity of stuffed peppers. They are delicious little nutritional powerhouses that add tons of vitamins and minerals without many carbs. And if you think about it, they work perfectly in place of nachos, tacos shells or bread! These easy Keto Cheesy Chicken Stuffed Peppers are my go to when I’m craving nachos. The peppers add a bit of crunch and you can stuff them with whatever you like on your nachos!

How to Make Chicken Stuffed Peppers

- Add chicken breast, cream cheese, dry ranch dressing mix and jarred pepperoncini peppers in your slow cooker. Cook on low all day and shred. The chicken is loaded with flavor and incredibly tender.
- Slice small sweet peppers in half and remove and seeds, stuff with the shredded chicken and top with cheese. Bake 15-20 minutes until the peppers are as tender as you like.

Are peppers okay for a keto diet?
One myth I hear a lot is that fruits and vegetables are off limits when following a keto diet. This is simply not true. There are many fruits and vegetables that are perfectly fine in moderation on a keto diet. Peppers including bell peppers, sweet peppers and jalapeño peppers naturally low in carbs and high in fiber which makes them a great candidate.
How many carbs are in sweet peppers?
For this recipe I use the small sweet peppers that usually come in a bag next to the bell peppers. They are small in size and a variety of colors such as yellow, red and orange. These little peppers are tasty on their own and can be eaten raw. They do not have many seeds inside like bell peppers do.
Of course peppers vary in size, but generally speaking these small sweet peppers have about 1.5 net carbs each and contain .5 grams of fiber. Making the net carbs for one small sweet pepper just one net carb each.

- 1 recipe of Slow Cooker Keto Ranch Chicken see below
- 1 pound mini sweet peppers
- 1/2 cup shredded mozzarella cheese
Instructions
- Prepare the zesty ranch chicken according to these directions.
- Preheat the oven to 350 degrees.
- Cut the mini sweet peppers in half and remove any seeds. Place them on a baking sheet (line with parchment paper, foil, or a silicone liner to prevent sticking), cut-side up.
- Stuff peppers with the shredded chicken, and then top with cheese.
- Bake 15-20 minutes until the peppers have reached your desired tenderness.
