Prepare the Chicken


Slice the chicken breasts lengthwise as if butterflying the chicken, but cut it all the way through. Do this to both chicken breasts so you end up with four total pieces. Then season each side of the chicken. Then go ahead and heat a skillet to medium heat. Add 1 tablespoon of olive oil and 1 tablespoon of butter.
Brown the Chicken


Place the chicken to the skillet and brown on each side for about 2-3 minutes until golden brown.
Make the Mustard Sauce


Add the second tablespoon of butter to the skillet. Next, add the garlic and shallot. Saute until fragrant then add the white wine to the skillet. Using a wooden spoon or spatula, scrape the bottom of the pan to deglaze then bring the wine to a simmer. Add both mustards to the pan and stir well. Allow it to reduce by half so the sauce thickens.
Add the Cream


Stir in the heavy cream. Combine the chicken with the cream sauce. Cover and simmer over low heat for 10-15 minutes until the chicken has reached an internal temperature of 165º F.
