Lately, I’ve been craving spring classics, starting with Strawberry Shortcake. I wanted a keto waffle without cheese, and these almond flour waffles were the perfect solution. One batch makes two small waffles you can enjoy however you like, with butter and syrup or topped with strawberries and whipped cream.
Keto Waffle Ingredients

- Almond flour: here is my coconut flour chaffle recipe if you cannot use almonds.
- Egg: size large
- Keto friendly sweetener: such as swerve or monkfruit
- Heavy Cream: this is used in the waffles as well as the whipped cream.
- Baking Powder: adds lift and rise.
- Strawberries: you can use other berries if you prefer.




How do you make Keto Strawberry Shortcake Waffles?
- Plug in your mini waffle maker and let it preheat. Once the light goes off, lightly spray with cooking spray, even if it’s nonstick.
- In a small bowl, whisk together the almond flour, egg, sweetener, heavy cream, and baking powder until smooth. Pour half the batter into the waffle maker and cook for 2–3 minutes, or until the waffle is puffed and golden. Remove and repeat with the remaining batter.
- To assemble, place one waffle on a plate, top with half the chopped strawberries and whipped cream, then repeat for the second layer.

- 3-4 strawberries , chopped
- ¼ cup whipped heavy cream
Instructions
- The first step is to plug in your mini waffle maker to preheat. When the light goes off, it's ready for batter. To avoid sticking, you may want to spray with oil.
- In a small bowl combine the almond flour, egg, sweetener, heavy cream and baking powder and whisk until smooth.
- Carefully pour half of the mixture into the waffle maker. It will take 2-3 minutes and the waffle maker will "pop" up a bit when the waffle has expanded and risen.
- Remove the first waffle and set aside. Repeat the steps for the second waffle.
- The final step is to assemble the strawberry shortcake stacks: Place one waffle on the bottom top with half the chopped strawberries and whipped cream, then repeat for the second layer.
