- Eggs: you will want to use large eggs for this recipe.
- Baking Items: extra fine blanched almond flour and baking powder
- Dairy: cottage cheese and cheddar cheese
- Deli Ham: you can choose the brand and flavor of your choice. For those on a low carb or keto diet, keep in mind a honey ham will affect carbohydrates.
- Jalapeno: you will de-seed and dice it for this recipe.
How to Make a High Protein Waffle
These high protein, low carb waffles only require a few minutes to prepare. You will simply need a mixing bowl, waffle maker, and the step-by-step instructions below.
Combine ingredients


In a mixing bowl beat the eggs well. Then you will fold in the remaining ingredients until completely incorporated into a batter.
Cook the waffles


Heat your waffle maker according to the manufactures directions. Once you’ve heated up your waffle maker, add the batter (about 2 scoops for the Dash waffle maker). *Be careful not to overfill your waffle maker.* Then you will remove the each waffle when you can no longer see any steam coming from the waffle maker. Your waffles should now be golden brown.

Storage and Reheating Instructions
These almond flour waffles are great for meal prepping. It is pretty simple to freeze them. Of course allow the them to cool completely first. Then you will want to separate them with parchment paper (to avoid sticking) and place in an airtight, freezer safe bag or container. For thawing, separate them and set the waffles you would like to thaw on the counter for about 30 minutes or slowly thaw overnight in the refrigerator.
These waffles can be reheated numerous ways including an air fryer, toaster, stovetop, microwave, or the waffle maker. The microwave is the simplest method, but I don’t recommend it because they will be soggy. There are ways to make them really crispy though and these methods are nearly as simple. I’ve shared detailed instructions below for the methods that will provide the best result.
- Air Fryer– Provides the crispiest reheated chaffles; Heat to 300 degrees F and reheat for 3-4 minutes.
- Waffle Maker– Preheat then drop the chaffle in for about one minute.
- Toaster– It should be reheated in about 30-45 seconds in the toaster.
