This pumpkin version with cottage cheese adds just a couple of extra ingredients for that warm, fall flavor while still being high in protein, low in carbs, and meal-prep friendly. They also happen to be naturally gluten free, which makes them a safe and tasty option for avoiding gluten.

What is a Chaffle?
A chaffle, short for “cheese waffle,” is a simple low-carb recipe made primarily with cheese and eggs. They’re really easy to prepare in a waffle maker and only take a few minutes. They are low in carbs and high in fat so they’re great for those of us on a keto diet and versatile enough to serve as sandwich bread, burger bun, snack, or even dessert.
The basic version only cheese and eggs, but I like to add almond flour and baking powder to my base recipe to provide more structure and improve texture. This pumpkin chaffle recipe only requires a couple additional ingredients to provide that sweet, fall flavor.
How to Make Pumpkin Chaffles
These low carb pumpkin waffles will only take you a few minutes to make. All you will need is a mixing bowl, waffle maker, and the step-by-step instructions below.
Combine the ingredients


First, in a mixing bowl, you will beat the eggs well. Then fold in the remaining ingredients until completely incorporated.
Cook


Heat your waffle maker according to the manufactures directions. Next, add the chaffle batter to the waffle maker (about 2 sccops for the Dash waffle maker) but be careful not to overfill. You will remove the waffles once you can no longer see any steam coming from the machine. At this point, the waffles should be golden brown.

Storage and Reheating Instructions
Chaffles store really well so they’re great for low carb meal prepping! To freeze, allow the chaffles to cool completely first. Then separate the chaffles with parchment paper (to avoid sticking) and place in an airtight, freezer safe bag or container. You can thaw these chaffles on the counter in about 30 minutes or slowly thaw overnight in the refrigerator.
You can reheat a chaffle with an air fryer, toaster, stovetop, microwave, or even the waffle maker. The microwave is the simplest method but the texture isn’t nearly as good. The chaffles won’t be nearly as crisp. I’ve shared detailed instructions below for the methods that will provide the best result.
- Air Fryer– Provides the crispiest reheated chaffles; Heat to 300 degrees F and reheat for 3-4 minutes.
- Waffle Maker– Preheat then drop the chaffle in for about one minute.
- Toaster– It should be reheated in about 30-45 seconds in the toaster.
