Keto Lunch Meal Prep Tips:
Each of these recipes can be prepped or made fully ahead of time.
- Make the peanut sauce on your prep day so that it can be used for the wrap and the chicken salad. Extra sauce works well as a marinade or salad dressing over greens, too.
- Cook chicken and separate out 1 cup (or 1 small breast) for the wrap and the remaining should be chopped for the chicken salad.
- Chicken salad can be combined and kept in the fridge up to 4 days.
- Chaffles can be cooked, cooled, and frozen for later if preferred. They will keep up to 4 days in the fridge, 6 months in the freezer.
- Ham and Cheese pinwheels can be made up to 3-4 days ahead of time and stored in the fridge.
- Tuna salad will keep 3-4 days in the fridge, so don’t prepare this until at least Tuesday or Wednesday.
- Collard Chips will last 7-10 days in an airtight container on the counter, so make those on your prep day and store in separate baggies for each day.
