You guys are loving my Instant Pot Buffalo Chicken Soup! It is so easy and loaded with flavor. I wanted to take all of that flavor and pack it into zucchini boats, perfect when you want to get your spicy, cheesy keto kick!
Zucchini boats are a great way to create a well-rounded, filling meal full of lean protein and veggies without excess carbs! These Buffalo Chicken Zucchini Boats are also a great meal prep recipe! We like to use a rotisserie chicken to help jumpstart things. Usually ever week I put 2 pounds of chicken in the slow cooker, cook on low 7-8 hours then shred. I use it for recipes like this, soups, salads and low carb wraps.

- Zucchini: Choose ones that are medium to large in size so that they can fit all of the filling. Try to pick zucchini that are similarly sized to help ensure that they will cook at the same rate.
- Shredded Chicken: You could use chicken breasts or boneless, skinless chicken thighs if you prefer dark meat. We love to utilize a rotisserie chicken or leftover chicken we already have available.
- Dairy: cream cheese, shredded cheddar, and mozzarella cheese
- Ranch Dressing: You can use your personal brand preference
- Buffalo Sauce: Again, you can use your personal brand preference
- Green Onions: this is an optional ingredient you can use as garnish
How to make Buffalo Chicken Zucchini Boats
This recipe is very simple and basically has two parts. Simply follow the instructions below!
- First, you need to slice your zucchini lengthwise and and remove as much of the inside of the zucchini as you wish. You want to have a nice well that you can fill with the buffalo chicken.
- Secondly, combine your buffalo chicken filling by mixing the cooked shredded chicken, cream cheese, ranch dressing, cheddar cheese and buffalo sauce together. Stuff the boats with the Buffalo Chicken mixture and top with mozzarella cheese. Then just bake until bubbly and fork tender!
Will Buffalo Chicken Stuffed Zucchinis work for Keto Meal Prep?
Yes, I find this recipe reheats perfectly. I just store in a microwave proof lunch container and heat in 30 second increments until warm. If you want, you can pack a little extra low carb ranch and Radish Chips for a low carb side and a Peanut Butter Fat Bomb to satisfy your sweet tooth!
Storage and Reheating Instructions
Allow your stuffed zucchini to cool completely, then store in an airtight container in the refrigerator up to 4 days. To reheat, simply microwave in 60-90 second bursts at 50% power until warmed through or bake at 350 for 5-10 minutes until warm throughout.
Zucchini can become mushy after thawing and reheating so I don’t recommend freezing a stuffed zucchini boat. If you plan to freeze, make the buffalo chicken filling ahead of time and freeze it instead. Simply make the filling as directed, allow it to cool completely, then freeze in an airtight container up to 2-3 months for the best texture. Thaw overnight in the fridge and spoon into hollow zucchini boats and bake whenever you’re ready to eat.

Buffalo Chicken Zucchini Boats

- 2 medium zucchini
- 2 cups chicken cooked and shredded
- 3 ounces cream cheese
- 1/4 cup ranch
- 1/2 cup shredded cheddar
- 1/8 cup buffalo sauce
- 1/2 cup shredded mozzarella cheese
Instructions
- Preheat oven to 350 degrees.
- Slice the zucchini length wise and use a small spoon or teaspoon to remove the inside of the zucchini and form a "boat." Place the hollowed zucchini in a 9×13 baking dish.
- Then in a medium size mixing bowl combine the cooked chicken, cream cheese, ranch dressing, shredded cheddar and buffalo sauce.
- Top with the shredded mozzarella. Bake 20-24 minutes until zucchini is fork tender.
