These Ham and Cheese Chaffles are crispy on the outside, soft on the inside, loaded with savory ham and melty cheese, and ready in less than 10 minutes. At about 1 net carb each, they’re perfect for an easy keto breakfast, quick lunch, snack, or meal prep.

Living with type 1 diabetes and celiac disease has inspired us to create recipes that are both low carb and gluten free without sacrificing flavor. After testing countless chaffle combinations over the years, this ham and cheese version has become one of my favorites and it’s also one of our most popular recipes on social media.
Enjoy these chaffles on their own, pair them with eggs, or use them as low carb sandwich bread. They also freeze and reheat beautifully, making them perfect for meal prep.

As always, you will find the complete recipe nd instructions below, simply keep scrolling. This is just a quick overview of the ingredients you will need:
- Eggs: you will need size large eggs for this recipe
- Shredded cheese: any variety works, but I usually do a mixture of mozzarella and cheddar
- Baking Powder
- Almond Flour
- Ham: preferably chunks of ham verses thin deli slices
What is a Chaffle?
While the term chaffle may be new to some, most of you probably know it as a “cheese waffle.” The term chaffle came to be because this is a waffle that is made from a cheese base. Most chaffle recipes contain some variety of egg, cheese and a low carb flour, such as coconut or almond flour.
The mixture may sound off, but I can assure you, they make perfectly crisp waffles on the outside and delightfully fluffy waffles on the inside! For more chaffle ideas and recipes, check out this post – Everything You Should Know about Chaffles!
How do you make a Ham and Cheese Chaffle?

- These low carb waffles could not be easier. Simply beat the eggs well, then fold in the almond flour, baking powder, cheese and ham.
- Next, add the batter to the waffle maker, be careful not to overfill, and cook 2-3 minutes until you no longer see any steam coming from the machine.
What waffle maker should I use?
You can make a chaffle with any waffle maker you have. However, I do love this handy little Ms. Dash waffle maker, they are the perfect size. This is the machine I used for this recipe and it makes 5 perfect waffles.
This size is also great as a bread substitute, you can layer your favorite sandwich fillings in between two chaffles and enjoy a quick and easy low carb sandwich!

Storage and Reheating Instructions
These chaffles hold up well for meal prep and are easy to stash in the fridge or freezer for later. First, make sure they’re completely cooled. Then you can store them in the refrigerator for up to 3-4 days in an airtight container. To freeze, stack them with parchment paper in between to prevent sticking. Transfer the stack to a freezer-safe bag or container and seal tightly.
You can warm them back up in a number of ways: air fryer, toaster, waffle iron, stovetop, or microwave. The microwave is definitely the quickest but it tends to make them soft and a bit soggy. If you want that crisp/just-cooked texture, I highly recommend using a toaster for 30-45 seconds, waffle maker for about 1 minute, or an air fryer for 3-4 minutes.

What topping would you suggest if any?

These are the best, I make them every week and choose to make them ahead of time for the week. My grandson is here for the remainder of the summer and I will get him hooked on them no matter what it takes..

Annie says
Hi Stephanie, 2 tablespoons coconut flour will do the trick.
Bonnie Schuning says
If you don’t have Almond flour, can you use regular flour?
Annie says
It may be fine, but I haven’t tried this with regular flour since we focus on low carb recipes.
