Here are five low-carb lunches that would work with a keto diet! I’ll be honest — Because I’m not feeding a lot of mouths, I usually stick to 2-3 recipes, and then I repeat lunches in the week. Monday – Italian Pinwheels

Keto Meal Prep Tips
- Make a big batch of the whipped feta dip so that you’ll have it for the Italian Pinwheels, the charcuterie, and for any mid-day snack cravings you get all week.
- Cook Italian Sausage Balls ahead of time and freeze. They will last 3-6 months in an airtight freezer bag — Suck or press out as much air as possible to prevent freezer burn.
- Italian Pinwheels can be made up to 4 days in advance. The whipped feta, once cold, holds the pinwheels together perfectly.
- The Italian Chopped Salad can be made up to 3 days ahead of time — Just make sure that any wet ingredients are kept separately from the greens to prevent them from becoming soggy.
- Italian Lettuce Wrap is best made 24 hours or fewer ahead of time. These are best as fresh as you can make them.
